We all love carving pumpkins. Little do we realise that this spooky tradition is creating an environmental nightmare. Each year in the UK throwing away the insides of our pumpkins produces 18,000 tonnes of food waste - now that is scary.
Let’s think twice this year and treat our palates to the insides of those pumpkins. As well as being tasty, they’re extremely rich in vitamins, minerals and antioxidants.
